There's a bit of a disconnect between your headline and your blog's actual content. It seem fairer to re-frame as a "redesign."
Redesigns are wonderful exercises in thinking through workflows and where improvements can be made. Where I'd caution is altering the UI for the sake of "minimalism" especially an app like Amazon who uses absurd amounts of data to drive user actions. When you say "stripping back unnecessary elements" I can say that nothing on the Amazon app is unnecessary to them. Every single pixel you see on the Amazon app is there with intention.
For example, the "realme narzo" phone ad might be unnecessary UI to you as a customer, but for Amazon it is valuable ad real estate that realme paid a lot of money to Amazon for. It's perhaps a situation where business goals and customer goals don't fully align.
